Gumbo Ya-Ya

Ingredients

Makes: 6 servings

  • 2 tablespoons extra virgin olive oil

  • 2 ribs celery, chopped

  • 1 cup frozen chopped onions

  • 1⁄2 cup frozen chopped green bell peppers

  • 4 cups water

  • 1 bag (16 ounces) frozen okra and tomatoes

  • 1 bag (16 ounces) frozen veggie crumbles (soy protein)

  • 2 teaspoons salt-free herb seasoning blend

  • 1 teaspoon black and red pepper blend

  • 1 can (15 ounces) organic Cajun beans and rice

  • Parmesan cheese (optional)

 

Directions

 

In a Dutch oven, heat oil over medium-high heat. Add celery, onions, and bell peppers and stir to coat with oil. Reduce to medium, partially cover, and cook to soften but not brown the vegetables, about 5 minutes.

Add water, okra and tomatoes, veggie crumbles, herb seasoning blend, and pepper blend. Bring to a boil over high heat. Reduce heat, cover, and simmer for 15 to 20 minutes, or until vegetables are tender. Stir in beans and rice and simmer for 10 to 15 minutes more.

Garnish with cheese, if desired.
