Greek Turkey Salad
Makes: 6 servings
Olive oil cooking spray
11⁄4 pounds turkey breast strips (tenders)
2 tablespoons lemon juice
1 tablespoon Greek seasoning
Salt and pepper
12 cups chopped romaine lettuce (about 20 ounces)
1 cucumber, seeded and chopped
2 medium tomatoes, cut up
1⁄2 medium red onion, thinly sliced
1⁄2 cup pitted Kalamata olives
1⁄3 cup crumbled feta cheese
3⁄4 cup “light” roasted garlic balsamic salad dressing
1⁄4 cup fresh oregano leaves
Coat a large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add turkey, lemon juice, and Greek seasoning. Cook and stir until turkey is cooked through, 5 to 7 minutes. Season to taste with salt and pepper. Set aside to cool.
In a large salad bowl, combine romaine, cucumber, tomatoes, red onion, olives, and feta. Toss with salad dressing.
Top with turkey strips. Garnish with oregano leaves.
