1 container (8 ounces) fresh mozzarella balls, drained and diced
3 tablespoons extra virgin olive oil
3 large plum tomatoes, seeded and diced
1 tablespoon minced fresh thyme, oregano, basil, or parsley
1⁄2 teaspoon coarsely ground black pepper
1⁄4 teaspoon coarse salt
Toasted baguette slices, for serving
Fresh thyme leaves, for garnish (optional)
In a medium bowl, combine diced mozzarella, olive oil, tomatoes, herbs, pepper, and salt. Toss to combine.
Spoon mixture onto toasted baguette slices.
Garnish with fresh thyme, if desired.
