Bacon Potato Boats

INGREDIENTS

  • 2 packages frozen cheddar and bacon potato skins 13.5 ounces each

  • 1 package Bob Evans® mashed potatoes 24 ounces

  • pepper

  • 2 tablespoons bacon bits

INSTRUCTIONS

  1. Preheat oven to 450°F. Place potato skins cheese side up on a baking sheet and bake for 15 minutes.

  2. Meanwhile, transfer mashed potatoes to a pastry bag.

  3. Pipe potatoes on top of potato skins. Season with pepper. Sprinkle bacon bits on top and return to oven until mashed potatoes are browned, about 5 minutes.
