Cornish Game Hens
4 Cornish game hens 20-ounce
3 tablespoons vegetable oil
4 teaspoons savory herb roasting rub McCormick®
Preheat oven to 400˚.
Rinse game hens inside and out with cold water; pat dry with paper towels. Truss legs with kitchen string. Brush hens evenly with vegetable oil. Sprinkle herb seasoning over hens.
Place hens, breast-side up, on a rack in a roasting pan. Bake, uncovered, for 1 to 1 1⁄2 hours, or until a meat thermometer inserted in the thickest part of the thigh registers 180˚ and juices run clear. Remove pan from oven, and let hens rest for 10 minutes. Remove and discard string before serving.
