Broiled Tilapia

Ingredients

Makes: 4 servings

  • 2 tablespoons olive oil

  • 4 (4- to 6-ounce) tilapia fillets

  • 1 tablespoon low-sodium blackening seasoning

  • 1 (1-pound) package frozen vegetable soup mix with tomatoes, thawed, McKenzie’s®

  • 1 (10-ounce) package frozen lima beans, thawed

  • 1 teaspoon salt

  • 1 teaspoon ground black pepper

  • Garnish: fresh oregano

 

Directions

 

Preheat oven to 500˚. Line a rimmed baking sheet with aluminum foil; grease foil with oil. Sprinkle fillets with blackening seasoning in crisscross fashion to resemble grill marks, if desired. Place fillets in a single layer on prepared pan. Bake for 10 minutes, or until fish is cooked through.

In a medium nonstick saucepan, combine frozen vegetable soup mix and lima beans; sprinkle with salt and pepper. Cook vegetables according to package directions. Serve tilapia with vegetables. Garnish with fresh oregano, if desired.
