Gingerbread Fruitcake Men
1 cup minced mixed dried fruit
1/2 cup apricot brandy
1 box gingerbread cake and cookie mix 14.5 ounces
3 cup apple juice
1/2 cup minced walnuts
1 tube white decorating icing 6 ounces
1. In a medium bowl combine fruit and brandy. Let soak for 20 minutes.

Preheat oven to 350°F. Coat 12 gingerbread molds with baking spray.
In a large bowl, combine cake mix, brandied fruit mixture, apple juice, and walnuts. Pour into prepared molds. Bake for 13 to 15 minutes, or until a wooden pick inserted in center comes out clean. Remove from molds to cool completely on wire racks.
Squeeze icing dots on fruitcakes, forming eyes, mouths, and buttons.
