1/2 cup sugar
1/4 cup coconut shavings finely shredded for garnish
2 1/2 cups coconut water chilled divided use
1/2 cup coconut rum
1/4 cup tequila
1/4 cup white chocolate liqueur
2 tablespoons lime juice
In a small pot over medium heat combine ½ cup coconut water with sugar. Heat until sugar has dissolved. Remove from heat cool.
Dip rims of 4 low-ball glasses into coconut simple syrup just to dampen. Place coconut shavings in a small plate invert glasses into coconut to coat the rims. Fill the glasses with ice.
In a pitcher combine remaining coconut water, rum, tequila and white chocolate liqueur, 2 tablespoons of coconut simple syrup and lime juice. Stir and pour into rimmed glasses, or without ice if using martini glasses.
