Stuffed Sweet Onion
4 large sweet onions peeled but whole
2 cups frozen vegetable medley thawed
1/2 cup shredded cheddar cheese
2 tablespoons herb garden seasoning
4 tablespoons butter (1/2 stick) cut into 4 pieces
Preheat grill to medium.
Slice top third off each of the four onions and reserve the tops. Slice an X in the inner two-thirds of each onion. Using a spoon, remove insides of onions to make a bowl. Dice up inner section of each onion and transfer the pieces to a medium-size bowl.
Add vegetable medley, Cheddar cheese, and herb seasoning to
the diced onion. Dividing evenly, use mixture to stuff onion bowls. Top each filled onion with 1 tablespoon butter.
Cover the onion with its original top and wrap in two layers of foil. Grill for 20 to 25 minutes, or until onions are tender.
