Makes: 6 servings
1⁄2 cup mayonnaise
1⁄2 cup barbecue sauce
1 tablespoon spicy brown mustard
1 tablespoon hot sauce
Kosher salt and pepper
11⁄2 cups coleslaw mix
1 tablespoon apple cider vinegar
2 teaspoons sugar
1⁄2 teaspoon red pepper fakes
12 small dinner rolls or slider rolls, split
2 cups shredded rotisserie chicken meat
In a bowl, whisk together mayonnaise, barbecue sauce, mustard, and hot sauce. Taste and adjust the seasoning with salt and pepper. Cover and refrigerate until ready to use.
In another bowl, toss together coleslaw mix, vinegar, sugar, and pepper fakes. Season with salt and black pepper, cover, and refrigerate until ready to use.
To serve, spread a heaping teaspoon of BBQ mayo onto each roll top and bottom. Divide chicken among rolls, top with cabbage, cover, and insert a toothpick to hold it all together.
