Makes: 4 servings
3 red bell peppers, cut into 1-inch pieces
1 large sweet onion, cut into 1-inch pieces
2 pounds fank steak
2 tablespoons Szechuan seasoning
1 bottle (11 to 12 ounces) stir-fry sauce
Cooked plain or fried rice (optional)
In a 5-quart slow cooker, combine bell peppers and onions.
Season both sides of steak with Szechuan seasoning. Roll up steak from narrow end. Secure with twine. Place in slow cooker on top of vegetables. Pour sauce over steak.
Cover and cook on LOW for 5 to 6 hours.
Remove steak from slow cooker and let rest for 5 to 10 minutes before slicing. Slice across the rolled steak and serve with vegetables and sauce over plain or fried rice.
