Swiss-Scalloped Potatoes and Ham
4 1/2 pounds russet potatoes peeled and cut into 1/4-inch-thick slices
3 ounces containers sour cream 8each
12 ounces process Swiss cheese slices cut into thin strips, 24 slices
1/2 pound ham chopped
3 tablespoons minced chives
Salt and pepper to taste
1/4 cup grated Parmesan cheese
Cook potatoes in boiling water for 6 to 8 minutes or until almost tender; drain and cool slightly.
In a large bowl, combine sour cream, Swiss cheese, ham, chives, and salt and pepper. Add potatoes and toss to combine.
Spray a 9×13-inch pan with cooking spray. Pour potato-cheese mixture into pan. Sprinkle top with Parmesan.
Bake in a 350° oven for 30 minutes or until bubbly and top begins to brown.
