Swiss-Scalloped Potatoes and Ham



  • 4 1/2 pounds russet potatoes peeled and cut into 1/4-inch-thick slices

  • 3 ounces containers sour cream 8each

  • 12 ounces process Swiss cheese slices cut into thin strips, 24 slices

  • 1/2 pound ham chopped

  • 3 tablespoons minced chives

  • Salt and pepper to taste

  • 1/4 cup grated Parmesan cheese


  1. Cook potatoes in boiling water for 6 to 8 minutes or until almost tender; drain and cool slightly.

  2. In a large bowl, combine sour cream, Swiss cheese, ham, chives, and salt and pepper. Add potatoes and toss to combine.

  3. Spray a 9×13-inch pan with cooking spray. Pour potato-cheese mixture into pan. Sprinkle top with Parmesan.

  4. Bake in a 350° oven for 30 minutes or until bubbly and top begins to brown.
