2 whole eggs, beaten
1⁄2 cup chicken broth, Swanson®
Ground black pepper
2 packages (3.5 ounces each) instant roasted garlic mashed potato flakes, Hungry Jack®
1 whole chicken, cut up, skin removed
Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray; set aside.
In a medium bowl, combine the eggs, broth, and black pepper. Place the potato flakes in a shallow dish. Dip the chicken in the egg mixture, then coat with the potato flakes. Place on the prepared baking sheet about 1 inch apart. Let stand for 20 minutes. Spray with cooking spray. Bake for 30 to 45 minutes or until golden brown.
