Pan-Seared Chops

Makes: 4 servings

  • 1 single-serving packet instant coffee

  • 1 tablespoon kosher salt

  • 1 teaspoon paprika

  • 1 teaspoon granulated garlic

  • 1 teaspoon ground black pepper

  • 1 teaspoon dried thyme

  • 4 bone-in pork chops (about 11/2 inches thick and 12 to 16 ounces each)

  • 1 tablespoon vegetable oil

  • Fresh thyme for a garnish




In a small bowl, stir together coffee packet, salt, paprika, garlic, pepper, and thyme. Using clean hands, rub spice mixture over both sides of chops, pressing to adhere. Let stand 30 minutes at room temperature.

In a large nonstick skillet, heat oil over medium-high heat; add pork chops. Cook 6 minutes on each side, or until desired degree of doneness.

Let stand 5 minutes before serving. Garnish with fresh thyme, if desired.
