Makes 4 to 6 servings
1 package (8-ounce) imitation lobster nuggets, Louis Kemp®
1 avocado, peeled, pitted, and diced
1 cup diced, seeded tomato
1⁄4 cup pepita-cilantro Caesar dressing, El Torito®
4 cups salad mix, Ready Pac®
2 jalapeño-cilantro tortillas (12-inch), Mission®
1. In a medium bowl, combine lobster, avocado, tomato, and dressing. Pile equal amounts of salad mix on tortillas, spreading to within 1 inch of edges. Top with lobster mixture.
2. Roll tortillas up tightly and wrap in plastic wrap. Chill for at least 1 hour. Remove plastic wrap. If desired, slice into 1-inch rounds.
