3 chicken breast halves
6 chicken thighs
Salt and Pepper
1 jar (12 ounces) ginger preserves
1 cup frozen chopped onion
2 tablespoons soy sauce
2 teaspoons bottled crushed garlic
freshly cooked pasta, for serving
Position rack 4 to 6 inches from heat and preheat broiler. Line a baking sheet with foil.
eason chicken with salt and pepper. Cut chicken breast halves in half crosswise. Arrange chicken pieces, skin side up, on baking sheet. Broil for 10 to 12 minutes, or until skin is golden and begins to crisp.
In a medium bowl, combine preserves, onion, soy sauce, and garlic.
Arrange a layer of chicken in a 5-quart slow cooker. Top with half of the preserves mixture. Repeat layers. Cover and cook on LOW for 3 to 5 hours.
If desired, serve over pasta.
