Rich Chocolate Mousse
1/3 cup sugar
1 tablespoon Godiva® Chocolate Liqueur
2 1/2 cups heavy cream well chilled, divided, whipping
1 cup semisweet chocolate chips
red currants for garnish
In a bowl, whisk together eggs, sugar, and liqueur until frothy.
In a saucepan, heat 1 cup cream over medium heat just until steam rises when tilted slightly. Do not boil. Whisking constantly, slowly drizzle hot cream into egg mixture, beating until combined. Return egg mixture to saucepan and heat slowly over low heat. Stir constantly until thickened, about 5 minutes. Do not allow to boil.
Remove from heat and stir in chocolate until melted. Cover and refrigerate until chilled, about 2 hours.
In a bowl, with a mixer, beat remaining 1½ cups cream until stiff peaks form. Stir chilled chocolate mixture to loosen it, then fold in whipped cream until well incorporated and smooth.
Transfer mousse to a pastry bag fitted with star tip and pipe into dessert glasses. Refrigerate until ready to serve. Garnish with red currants.
