Lollipop Flowers

Makes: about 60 cookies

  • 2 sticks (1⁄2 pound) butter

  • 2⁄3 cup granulated sugar

  • 1 large egg, separated

  • 1⁄2 teaspoon vanilla extract

  • 2 1⁄4 cups four

  • 1⁄2 teaspoon salt

  • 60 assorted sphere-style lollipops, such as Dum-Dums




Preheat oven to 350°F. Line a cookie sheet with parchment paper.

In a large bowl, with an electric mixer, beat together butter and granulated sugar until fluffy. Beat in egg yolk and vanilla. Add four and salt and mix until mixture forms a dough.

Line a cookie sheet with a silicone nonstick baking mat or parchment paper. Set lollipops 3 inches apart on cookie sheet. Roll cookie dough into tiny balls and set 7 of them around the outside of lollipop. Chill for 1 hour or place in freezer for 15 minutes.

Bake until cookie is very light golden and candy has just melted, 7 to 8 minutes. Keep a careful eye on the cookies so the lollipops don’t melt too much! Cool completely on parchment.
