Ginger Orange Cookies

Makes: 10 sandwich cookies

  • Baking spray

  • 1 box spice cake mix

  • 1⁄4 cup vegetable oil

  • 2 large eggs

  • 2 tablespoons unsulfured molasses

  • 1⁄2 teaspoon ground ginger

  • 2 packages (8 ounces each) cream cheese, at room temperature

  • 1⁄2 cup powdered sugar

  • 1 tablespoon grated orange zest

  • Red and green decorator sugar




Preheat oven to 350°F. Coat a baking sheet with baking spray.

In a large bowl, combine cake mix, oil, eggs, molasses, and ginger. Form dough into twenty 2-inch balls. (Dough will be sticky.) Using hands, flatten balls on prepared baking sheet. Bake for 10 to 12 minutes, or until edges begin to brown. Transfer to a wire rack to cool completely.

In a large bowl, with an electric mixer on medium speed, beat together cream cheese, powdered sugar, and orange zest until smooth. Spoon cream cheese mixture evenly on flat side of 10 cookies. Top with remaining 10 cookies, flat side in. Roll edges of cookie sandwiches in decorator sugar. Store, covered, in refrigerator.
