Coconut Sandwich Cookies
1 package sugar cookie mix 17.5 ounces
8 tablespoons butter at room temperature (1 stick)
1 large egg lightly beaten
1 teaspoon coconut extract
1 1/2 cups sweetened flaked coconut divided
16 tablespoons canned white frosting
Preheat oven to 350°F. Lightly coat sheets with cooking spray.
In a large bowl, combine sugar cookie mix, butter, egg, coconut extract, and 1/2 cup coconut flakes. Stir together until a soft dough forms. Using clean hands, roll into 32 walnut-sized balls and place on cookie sheets.
Bake until edges are lightly browned, 7-9 minutes. Cool on pans for 5 minutes before transferring to wire racks to cool completely, about 1 hour.
To assemble, place 1 tablespoon frosting in center of flat side of 16 cookies. Top with remaining 16 cookies, flat sides down, gently pressing to fill cookies. Roll edges in remaining 1 cup coconut flakes.
