Apple Pecan Pie


Makes: 8 servings

Cook: 40 to 45 minutes

  • 1 refrigerated pie crust

  • 3 eggs, slightly beaten

  • 1 cup apple butter

  • 1 cup corn syrup, light or dark

  • 1⁄3 cup packed brown sugar

  • ¼ cup butter or margarine, melted

  • ½ teaspoon apple pie spice

  • 1½ cups pecan halves




Carefully line a 9-inch pie plate with the pie crust; crimp crust as desired. Preheat oven to 350°.

In a medium mixing bowl combine eggs, apple butter, corn syrup, brown sugar, butter, and apple pie spice. Mix well with a whisk. Stir in pecans.

Pour into prepared pie shell. Bake for 40 to 45 minutes until done, covering edge of crust if necessary the last 15 minutes. Pie is done when a knife inserted in center of pie comes out clean. Cool completely on a wire rack.
