  • 3    cups coconut cookies, Mother’s Cookies® Cocadas®

  • 14    shortbread cookies, Lorna Doone®

  • 1⁄2    cup pecans, Planters®

  • 1    stick (1⁄2 cup) butter, melted

  • 4    egg yolks

  • 2 1⁄4    cups sweetened condensed milk, Eagle Brand®

  • 3⁄4    cup key lime juice, Nellie & Joe’s®

  • 1⁄2    cup lime curd, Dickinson’s®

  • 3    or 4 drops green food coloring, McCormick®


  1. Preheat oven to 325 degrees F. In a food processor, combine coconut cookies, shortbread cookies, and pecans; cover and process until fine crumbs form. Add butter; pulse until mixture comes together. Press into 9-inch square baking pan.

  2. In a large bowl, combine yolks, sweetened condensed milk, lime juice, lime curd, and green food coloring; beat with an electric mixer on low speed about 30 seconds or until well mixed. Pour over cookie crust. Bake in preheated oven for 30 to 35 minutes or until set. Cool to room temperature. Chill in refrigerator until completely cool. Cut into bars. Garnish with shredded lime peel (optional).
