Ingredients
1 7-pound smoked fresh ham
½ cup packed light brown sugar
½ cup apple jelly
1 tbsp. finely grated fresh ginger
2 tsp. minced garlic
¼ cup spicy brown mustard
3 tbsp. apple cider vinegar
Directions
Preheat oven to 350°F. Place ham in a roasting pan fat- side up. Score fat with a crisscross pattern and cover with foil. Cook ham for about 1½ hours or until a meat thermometer inserted in the center reads 145°F.
In the meantime, in a small saucepan over medium heat stir together remaining ingredients for glaze along with 2 tablespoons water. Bring to a simmer and cook for about 2 minutes until it has a smooth syrupy consistency.
Remove ham from oven. Pour off liquid in pan, generously coat ham with half of the glaze. Place in oven and bake an additional 20–30 minutes, halfway through basting with remaining glaze. Remove from oven and allow ham to rest for 30 minutes before slicing and serving.
