Elegant Shrimp Rings

Ingredients
  • pink grapefruit juice Ocean Spray®
  • 2/3 cup finely chopped refrigerated pink grapefruit segments Del Monte®
  • 1/2 cup chili sauce Heinz®
  • 2 tablespoons prepared horseradish Morehouse®
  • 1/4 teaspoon celery salt
  • 2 bunches fresh watercress
  • 2 pounds large cooked shrimp with tails thawed if necessary

  • 1/2 cup chili sauce Heinz®
  • 2 tablespoons prepared horseradish Morehouse®
  • 1/4 teaspoon celery salt
  • 2 bunches fresh watercress
  • 2 pounds large cooked shrimp with tails thawed if necessary
Instructions
  1. Pour enough grapefruit juice into six 4-inch mini fluted tube cake pans to almost fill pans. Freeze for 4 hours.
  2. For Pink Grapefruit Cocktail Sauce, in a small bowl, stir together grapefruit segments, chili sauce, horseradish, and celery salt. Cover and refrigerate until ready to serve.
  3. To serve, arrange watercress decoratively on a cake pedestal. Dip mini fluted tube pans in warm water until the juice rings release. Place juice rings on watercress on pedestal. Place a long-stem cocktail glass onto center of pedestal.
  4. Fill bowl with Pink Grapefruit Cocktail Sauce. Arrange shrimp around ring.
