Chilled Succotash Salad

Ingredients
  • 4 cups water
  • 3 cups fresh baby lima beans
  • 1 cup fresh corn kernels about 2 ears
  • 1 cup chopped tomato
  • 3 tablespoons canola oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives
  • 3 in bacon slices cooked and cuthalf crosswise

  • 4 cups water
  • 3 cups fresh baby lima beans
  • 1 cup fresh corn kernels about 2 ears
  • 1 cup chopped tomato
  • 3 tablespoons canola oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons chopped fresh chives
  • 3 in bacon slices cooked and cuthalf crosswise
Instructions
  1. In a medium saucepan, bring 4 cups water to a boil. Reduce heat to medium-low, stir in lima beans, and simmer for 10 minutes, or until tender. Drain; rinse under cold running water.
  2. In a medium bowl, combine beans, corn, tomato, oil, lemon juice, salt, and pepper. Cover and chill for at least 1 hour, or up to 4 hours. Just before serving, sprinkle with chives, and serve with bacon.
